Chicken in mango curry

Tell most Kenyan women to cook you something amazing and DAMN what a mess. All women who can cook say i!!!!! oops!!!!!! no one apart from me and a certain Miss sited at the corner hmm!!!!! that makes it 2 out of ten what a shame, well thats the typical scenario. Ladies lets glam this up a notch higher. You know on my way to work i look at all the mangoes in the market: some of us are lucky to have a market nearby(LAUGHING), and my mind does what it does best. Think Jan think, what to do?: a month down the line they will be gone, lets eat to our fill i think. This fruit being native to India they sure would have a recipe or five for it, and sure i got some. They are impressive an armory of culinary skills. Definitely a keeper.

Chicken in mango curry [To serve around 4]wing chicken

  • 3 tbs coriander/dhania powder
  • 4 tbs cumin
  • 1/2 tbs chopped ginger
  • 1/2 tbs chopped garlic
  • 2 tbs sugar
  • 0.4 kg or 396gms skinless,boneless chicken breasts cut into cubes
  • 1 can coconut milk
  • 2 big mangoes can be any type just ripe peeled and sliced divided into two portions
  • 4 shallots/ normal red onion sliced
  • 2 tablespoons curry paste hot or mild as preferred
  • 1 cucumber sliced
  • 2 tablespoons oil

Blend one portion of mango with coconut milk saute the onions in oil till golden stir in curry paste, all the other spices and chicken cook till the chicken cooks
Add the the mango puree and heat through
serve with rice garnish with remaining mangoes and cucumber.

BEST THING ABOUT THIS IS THAT ALL THESE SPICES ARE ALL READILY AVAILABLE IN ALL LEADING SUPERMARKET
